Ingredients
For the Kheer Layer
- 1 pack Millétopia Instant Millet Kheer
- Milk, as required according to pack instructions
- ¼ tsp cardamom powder
- A few strands of saffron, optional
For the Crispy Kunafa Layer
- 1 cup thin vermicelli, lightly crushed
- 1½ tbsp ghee
- 1 tbsp sugar
- 2 tbsp finely chopped pistachios
- 1 tbsp finely chopped almonds
For Garnishing
- Chopped pistachios
- Dried rose petals
- A few saffron strands
Method
- Prepare the Millétopia Instant Millet Kheer according to the instructions on the pack.
- Keep it slightly thick so that it layers beautifully in the serving glasses.
- Stir in the cardamom and saffron. Allow the kheer to cool, then refrigerate for about 30 minutes.
- Meanwhile, heat the ghee in a pan over low-medium heat.
- Add the crushed vermicelli and roast until crisp and beautifully golden.
- Add the sugar, pistachios, and almonds. Toss for another minute and remove from the heat. Allow the mixture to cool completely.
- Take small dessert glasses and add a layer of the crispy vermicelli mixture at the bottom.
- Spoon a generous layer of chilled millet kheer over it.
- Repeat with another thin crunchy layer followed by kheer.
- Finish with a little crispy vermicelli, chopped pistachios, dried rose petals and a few strands of saffron.
- Serve immediately if you want maximum crunch, or refrigerate briefly before serving.
Millétopia Tip: Keep the final kunafa layer separate until you're ready to serve. Sprinkle it on at the last minute so you get that beautiful contrast between creamy kheer and crisp vermicelli.
Make It Extra Special: Serve the cups in small glass dessert bowls and add a tiny drizzle of rose syrup or a few drops of rose water to the kheer for a more festive flavour.
